
Fermented Colour and Flavour
Food use where it is allowed. It is not an EU food colour additive.

Red yeast rice is rice fermented with Monascus. The marker people argue about is monacolin K, sold here from about 0.2% to 5%. In its lactone form, monacolin K is chemically the same molecule as the drug lovastatin.
The traditional food use is colour and fermentation flavour. The supplement use is cholesterol-oriented and is restricted. In the EU, a daily portion must supply less than 3 mg of monacolins from red yeast rice, with set warnings.
When buying, fix the monacolin K percent and the citrinin limit. Citrinin is the mycotoxin that fails lots.

Every lot needs a citrinin result, not only monacolin K.
