Ginger extract is standardized to gingerols, commonly 5%, 10% or 20%, plus a lower water-soluble gingerol grade around 1%.
The pungent grades flavour shots and go into nausea-oriented capsules. The water-soluble grade is for drinks that must stay clear. Essential oil is a different ingredient.
When buying, set the gingerol percent and say if the drink must be water-clear.
