Genipin is the aglycone from gardenia fruit (Gardenia jasminoides), sold here at about 98%. It is not gardenia blue, and it is not the yellow crocin colour.
Genipin crosslinks proteins and chitosan, so it is used in biomaterial and colour-reaction R&D, and as a defined reference. The blue pigment forms only after it reacts with amino acids.
When buying, confirm HPLC assay and that you were not shipped a colour value grade.

Blue colour is a reaction product. This jar is the precursor, not the lake.

Do not drop a 98% genipin into a cream because the fruit is “natural”.

Blue appears only after genipin meets amino groups. The powder itself is not gardenia blue.

98% genipin is an isolate. A gardenia juice powder will not pass the assay.
