Ethyl vanillin is a synthetic flavour molecule, stronger and slightly different from vanillin, at about 99% purity. It does not come from a vanilla bean or from ferulic-acid fermentation.
It is used in confectionery, bakery and dairy flavours at a lower dose than vanillin. It is not a “natural flavour” under typical labelling rules.
When buying, specify ethyl vanillin, assay, and melting point. Do not let it be swapped with the natural vanillin code.
